Executive Chef Bernard Ibarra, The Mirage Hotel & Casino
. It's no illusion,
but it can only be The Mirage, a hotel known for its celebrity guests
and four-star amenities. Here to give us a taste of the good life are
Bernard Ibarra and Alessandro Stratta, two movers and shakers on the
Vegas dining scene.
Ibarra, a
native of the French Pays Basque, got his start at the nearby Michelin two-star Hôtel des
Pyrénées, before moving to Canada, where he worked for the government.
He then began a longlasting relationship with the Four Seasons Hotel
group that took him all over the world. Ibarra has worked at outposts in
Calgary, Toronto, Vancouver, Seattle, Houston, Tokyo, and Singapore. In
the off-Seasons, he has run his own catering company in Florida and
headed the kitchens of Arnaud's in New Orleans. He was executive chef
first of the Shangri-La Hotel in Singapore and then the world-renowned
Mandarin Oriental in Hong Kong, before coming to the Mirage,
where he oversees all the Mirage restaurants, including Samba Brazilian
Steakhouse, Onda, Kokomo's, Mikado, and Renoir.

Spanish food has always been one of my favorite staples and, when
ever I can, I introduce many of the peninsula's food and or recipes
to our guests, here at The Mirage.
